Trigo (Triticum spp) es el término que designa el conjunto de cereales, tanto cultivados como silvestres, que pertenecen al género Triticum; son plantas anuales de la familia de las graminias, ampliamente cultivadas en todo el mundo.
La alergia a los cereales constituye un 3.3% de todas las alergias causadas por alimentos según el estudio «Alergológica 2005).
Hay que distinguir entre la alergia al trigo y la intolerancia al gluten (enfermedad celíaca).
La enfermedad celíaca (EC) es una intolerancia permanente al gluten. Esta enfermedad requiere una restricción del gluten para toda la vida. El gluten es una proteína que se encuentra en el trigo, el triticale, la cebada, el centeno y la avena. Estos cereales, y sus subproductos, han de ser evitados estrictamente por las personas que padecen la enfermedad celiaca.
Las personas alérgicas al trigo tienen una respuesta a la proteína del mismo mediada por IgE, es decir una respeta alérgica. Estos individuos solo deben evitar el trigo.
La mayor parte de los niños que padecen alergia al trigo llegan a superarla con el tiempo.
